Refreshing iced tea with tapioca pearls
It really doesn't get more summery than a chilled glass of sweet lemon iced tea. The options in the supermarket are numerous, but unfortunately they are often full of ingredients that are hard to pronounce...
This fresh, homemade version is so easy to make and absolutely delicious. The tapioca pearls add a very unique touch to this drink!
Ingredients:
- 950ml water
- 70ml lemon syrup
- 10 bags of black tea
- Juice of 6 lemons
- 4 sliced ​​lemons
- Pinch of baking soda
Preparation of the tea
Bring 4 cups of water to a boil.
In a large, heat-resistant pot, mix the boiling water with the baking soda and syrup. Add the tea bags and let it steep for 10 minutes (the longer, the stronger the taste). A pinch of baking soda reduces the bitterness and makes the tea "softer".
Remove the tea bags.
Add the lemon juice and fill the rest of the jug with cold water.
Refrigerate until cooled.
Preparation of the tapioca pearls
- 100 grams of tapioca
- 600 milliliters of water
Ingredients honey/sugar mixture:
- 2 tablespoons (brown) sugar
- 1 tablespoon honey
- 150 milliliters of boiled water
Boil 600ml water and add 100 grams of tapioca
Cook for 30 minutes and then allow to cool (important!). Rinse with cold water.
Add the honey-sugar mixture.
Place lemon slices and ice in the glasses and pour the tea over ice cubes and lemon slices to serve. Add cooked tapioca pearls.

Taste tips and variations:
Tea blends: This recipe uses pure black tea bags, but you can use any blend you like. Black tea flavored with fruit, for example, is also great for iced tea.
Green tea: If you want to use green tea, the hot brewing method is especially important, as it can become bitter if you let it brew cold.
